Nothing more delicious than a homemade gluten free donut. Besides being super easy to make and a yummy gluten free treat, I had a blast playing with the Suncore Foods Sapphire Wolfberry powder to make these two different colored glazes! . I found out that when you add the powder to different pH levels, the color changes! So for one glaze , I used the basic vanilla glaze ingredients, and for the other I added lemon. Its color-changing abilities makes this glaze a perfect activity to do with kids too
Here’s how I made these fun donuts:

Donut:
- 1 cup gluten free flour (this is one of my favorite GF flours- King Arthur GF Flour)
- 1/3-1/2 cup sugar (depends on your sweetness preference!)
- 1 teaspoon baking powder (if you want corn free one, use Pamela’s corn free baking powder!)
- 2 tbsp of coconut oil or avocado oil
- pinch of salt
- 1.5 tsp vanilla
- 1/3 cup almond or coconut milk
Mix dry ingredient and wet ingredients separately, then combine and pour in donut tray. Bake at 350F for 10 minutes
Glaze:
- 1/4 cup powdered sugar
- 1/2 tsp Suncore Foods sapphire wolfberry powder
- 1/2 lemon juice (or about 1 tbsp)
- a touch of almond or coconut milk- you’ll have to play with the amount to achieve your preferred consistency! -for the sapphire glaze
- 1/4 cup powdered sugar
- 1/2 tsp Suncore Foods sapphire wolfberry powder
- 1-2 tbsp of milk
Combine all glaze ingredients, dip the donuts in the glaze, and voila!
