
Finally have gotten around to adding my MOST COLORFUL recipe on my instagram–gluten free, dairy free Rainbow Cupcakes! I made them using three types of Suncore Foods Supercolor Powders: pitaya, pandan leaf, and spirulina. For those of you staying away from artificial colors or flavors, these are the cupcakes for you! They have so many superfood colors to choose from, you can’t go wrong ! Here is the recipe to these magical treats:
Cupcake Ingredients:
- 1.5 cup GF flour
- 2 tsp baking powder (Pamela’s is corn free also!)
- 1/2 cup cane sugar (or coconut, monk fruit, stevia, etc)
- 1 tsp vanilla
- 1 egg ( These can also be made vegan by removing the egg and subbing flax egg or apple sauce )
- 1/4 cup coconut oil, butter, or ghee
- any Suncore Foods powders
Frosting Ingredients:
- 2 cups powdered sugar
- 1 tbsp Suncore Foods pink pitaya powder (or any other superfood color!)
- 2 tbsp vegan butter or shortening (room temp)
- 1.5 tbsp dairy free milk
- 1 tsp vanilla
Instructions:
- Heat oven to 350F
- Combine all wet ingredients and dry ingredients (except superfood powders) separately. Mix wet with dry.
- In three bowls, separate mixture and add colors to each and blend well.
- In a greased cupcake pan, layer and swirl the colors
- Bake for ~20 minutes
- Frosting- Blend all ingredients together in mixer. If too thick, add more milk. If too thin, add a little more powder sugar
And voilà ! The most colorful cupcake everyone can enjoy! I sprinkled mine with Homemade Allergy Friendly Coconut Sprinkles.

These Suncore food powders are showing up everywhere, but what I am wondering–is do they leave an unusual taste? Many people are eating them as super foods in exotic clean recipes and that’s all well and good for people who like that sort of thing, bu what if you want to do make standard baked goods (like your cupcake icing?) Will these put off family members who don’t want to try exotic foods? Your cupcake icing is gorgeous but does it taste funny or are the sugar and other ingredients enough to overpower any powder taste? Thank you.
Hi Karen! What I have noticed is that all have slight taste, some stronger than others. For my really vibrant colors, I don’t taste much difference with pitaya and spirulinia. However, something like matcha does taste like matcha- which I love! I have just played around with what I use for baking versus what I put in my smoothies
