Grain Free Protein Shortbread Cookies
Ingredients
- 1 cup blanched almond flour
Bob's Red Mill Almond Flour, Resealable Stand up Bag, 32 OZ - 1 scoop Nuzest vanilla clean lean protein powder
- 1/4 cup sugar – I used regular cane sugar but you could also use honey, maple syrup, etc.
- 1/4 cup cup melted ghee
- 1-2 tbsp water (might not need this if you use liquid sweetener)
- 1 tsp vanilla extract
Instructions
- mix sugar and melted ghee first
- mix the rest of the ingredients until it forms a dough
- let the mix sit in the refrigerator for 30 min-hour
- roll dough into balls and form cookie shape by lightly pressing dough
- bake for 15 minutes at 350F
- once cookies cooled, I frosted them using Simple Mills vanilla frosting, mixed with 1 tsp Suncore Foods (code PEACEGFCAKE15 for 15% off) blue spirulina – try any of their supercolor powders for a natural alternative to food dyes or try the Homemade Rainbow Sprinkles (allergy friendly!)

Hi! Sorry for the late response! Here are the stats I pulled from a nutrition calculator (this is without frosting or sprinkles) I calculated about 24 cookies. So it will depend on how many you make and the size
