Gluten free chocolate chip cookies are my guilty pleasure. Anyone else relate? There is nothing better than enjoying a fresh, out of the oven cookie at then end of the day. I have tried many gluten free chocolate chip cookie recipes, and this by far is my favorite!
What makes these the best gluten free chocolate chip cookies?
On my checklist of what makes a good chocolate chip cookie great: texture, taste, and ingredients. This cookie is crispy on the outside, chewy and soft on the inside. In the taste category, it has the perfect balance of sweetness, and the almond flour and almond butter gives these cookies amazing flavor. Beyond being delicious, this chocolate chip cookie recipe is super adaptable. I have included multiple substitutes to make it vegan and/or paleo. I add Nuzest Vanilla Protein Powder to this recipe to make the cookies a protein-packed treat. However, if you do not want to use protein powder, it can easily be taken out. Just add an additional two tablespoons of almond flour. The almond flour and butter itself makes these cookies a higher protein option to a traditional cookie. Tasty, flavorful, and healthy, these truly are the best gluten free chocolate chip cookie.
