Made this Purple Sweet Potato Nice Cream as a healthy, easy treat that is dairy free, gluten free (of course!), refined sugar free, and free of artificial coloring. Also hiding some vegetables in your desserts can’t hurt! Here’s all you need for this quick and healthy recipe:
Ingredients
- 2 frozen bananas
- 1 can coconut cream
- 2 tsp Suncore Purple Sweet Potato powder (code PEACEOFGFCAKE15 for 15% off)
While I used a sweet potato powder, you can easily use a pre-cooked and frozen purple sweet potato as a substitution.
As much as I love ice cream, my stomach can’t always handle all the dairy and sugar. That’s why I love making “nice” cream out of frozen ripe bananas! (Hint: the longer the bananas ripen, the sweeter they will be!) You can also replace the sweet potato and use an neutral flavored vegetable.
Sweet Potato Nice Cream
Ingredients
- 2 frozen bananas
- 1 can coconut cream

Instructions
- Blend all ingredients in blender or food processor
- Add to freezer friendly container or loaf pan and freeze for at least 2 bours
- When frozen, scoop, add toppings and enjoy!
