Superfood Glazed Donuts

Nothing more delicious than a homemade gluten free donut. Besides being super easy to make and a yummy gluten free treat, I had a blast playing with the Suncore Foods Sapphire Wolfberry powder to make these two different colored glazes! . I found out that when you add the powder to different pH levels, the color changes! So for one glaze , I used the basic vanilla glaze ingredients, and for the other I added lemon. Its color-changing abilities makes this glaze a perfect activity to do with kids too

Here’s how I made these fun donuts:

Donut:

  • 1 cup gluten free flour (this is one of my favorite GF flours- King Arthur GF Flour)
  • 1/3-1/2 cup sugar (depends on your sweetness preference!)
  • 1 teaspoon baking powder (if you want corn free one, use Pamela’s corn free baking powder!)
  • 2 tbsp of coconut oil or avocado oil
  • pinch of salt
  • 1.5 tsp vanilla
  • 1/3 cup almond or coconut milk

Mix dry ingredient and wet ingredients separately, then combine and pour in donut tray. Bake at 350F for 10 minutes

Glaze:

  • 1/4 cup powdered sugar
  • 1/2 tsp   Suncore Foods sapphire wolfberry powder
  • 1/2 lemon juice (or about 1 tbsp)
  • a touch of almond or coconut milk- you’ll have to play with the amount to achieve your preferred consistency! -for the sapphire glaze
  • 1/4 cup powdered sugar
  • 1/2 tsp   Suncore Foods sapphire wolfberry powder
  • 1-2 tbsp of milk


Combine all glaze ingredients, dip the donuts in the glaze, and voila!
