Grain Free Protein Shortbread

These protein shortbread are unbelievably easy and made with only 6 ingredients! They are also delicious unfrosted or topped off with nut butter of your choice or my Homemade Rainbow Sprinkles (allergy friendly!) ! Any color frosting can be easily made using Suncore Food’s Supercolor Powder (this link will direct you to a 15% discount!!) Here is the recipe for these healthy treat

Ingredients:

1 cup blanched almond flour

1 scoop Nuzest vanilla clean lean protein powder

1/4 cup sugar – I used regular cane sugar but you could definitely try honey, maple syrup, etc.

1/4 cup melted ghee

1-2 tbsp water (might not need this if you use liquid sweetener)

1 tsp vanilla

Instructions:

  • first beat melted ghee and sugar together, then add remaining ingredients
  • cool dough in the refrigerator for 30 min-1 hour (or longer)
  • roll into balls and flatten into desired cookie shape
  • bake 15 min at 350
